Exciting things are happening in my house! Last weekend, I went out on a limb and got a vendor booth at the downtown Fall festival, Pumpkintown. I SOLD OUT!!! Holy cow! I still can’t believe it! The booth looked beautiful thanks to Kathy at ShinDigs Event Decorating. Cupcakes always need a pretty display! Plus my amazing husband helped me get ready and work my booth. I’m so lucky! Huge thanks to everyone who stopped by and bought a cupcake! I truly appreciate your support. Also, a word of welcome to those of you who discovered me at Pumpkintown. I started thinking of Fall inspired flavors a few months ago and came up with these:
Grandmother Betty’s Pumpkin Cupcake
This is my grandmother’s recipe for pumpkin bread, but baked into a cupcake shape. Let’s be honest. The bread is just cake in a loaf form anyway. I love this bread so much! It’s been a staple at Thanksgiving and Christmas as long as I can remember and it just smells like Fall with the nutmeg and cinnamon. Since it needed a topping to be called a cupcake, I decided to add a simple cream cheese icing and garnish it with chopped pecans.
Apple Pie Cupcake
I tried this one out a few weeks ago. You can read about it here. I stuck with the apple pie filling and brown sugar and cinnamon buttercream icing. These sold like hotcakes despite the boy scouts selling actual apple pies right across the street!
Sherry’s Strawberry Cupcake
My mother-in-law, Sherry, makes the best strawberry cake ever. I purposefully didn’t volunteer to make a cake for our last family birthday because I wanted to eat her cake instead. After quizzing her on technique, I think I can get a pretty close replica. It’s a dense cake with real strawberries, but it’s so moist and flavorful. Like her, I topped it with a cream cheese icing.
This is another recipe I tried a few weeks ago for a friend’s birthday. I wanted something unique and that would catch your eye and it was prefect. Everyone who tried it loved it. It’s a great warm, spice flavor with the orange cream cheese bringing out the citrus.
